Ingredients:

250g orzo
-
1 pack Soul Kitchen Mushroom, Black Pepper & Thyme Soup

100g sliced mushrooms

Handful of cherry tomatoes

1 block feta
-
250ml vegetable stock

Fresh parsley, chopped
Method:

Add the cherry tomatoes, sliced mushrooms and feta to a baking dish. Top with 1 packet of Soul Kitchens mushroom, thyme and black pepper soup mix (dry). Drizzle with olive oil.

Bake at 190°C for 15 minutes.

Remove from the oven and stir in the uncooked orzo along with the vegetable stock.

Return to the oven for another 10–15 minutes until the orzo is cooked and the liquid absorbed.

Finish with chopped parsley and extra black pepper.
