Using: Soul Kitchen Curried Sweet Potato & Pumpkin Soup
(protein-packed, no flour, no fuss)
Ingredients

1 pack Soul Kitchen Curried Sweet Potato & Pumpkin Soup (used dry as seasoning)

100g paneer, grated (we love All the Aunties Paneer, now in Tesco)

100g cheddar, grated
-
200g frozen peas, defrosted
-
2 eggs
-
2 spring onions, finely sliced
-
Oil / ghee for frying
Method
1. Prep the batter
In a bowl, add:

grated paneer
-
grated cheddar
-
Defrosted peas (lightly crush half for texture)

Sliced spring onions

2 eggs, whisked
-
1 packet of Soul Kitchen soup mix (dry)
Mix everything together until you get a thick, sticky mixture.
👉 The soup acts as your seasoning + flavour base, no extra spices needed.
2. Shape
Scoop and shape into small fritters using your hands or a spoon.
3. Cook
Heat a little oil in a pan and cook for:

3–4 minutes per side
until golden, crispy and cooked through.
(Alternatively bake at 200°C for ~20 mins, flipping halfway.)
